Arena is harder than the normal game, mainly because there is nowhere you can run to another area to heal up (bosses don't automatically follow you into the next zone). The fact that your item supply and gear are less than ideal in the arena also doesn't help matters. Play through the normal game offline at least for a few hours. It gives you a thorough tutorial on the controls and lets you get some practice doing pretty much everything. Then do the first few quests, and you'll get a quest to kill that same guy, but you'll have 50 minutes to do it in, be able to flee and heal up, and be able to bring whatever items you have collected to that point with you, giving you a huge leg up.

The main trick is to realize that it is far more important to avoid taking damage than it is to deal damage at any given moment. You still have to attack, but it takes so much more damage for you to kill them than it does for them to kill you that you can't even consider trying to trade blows. Generally, it is a good idea to spend the first 10-15 minutes when facing a boss you haven't fought before to not attack at all. Just focus on dodging and learning how to identify which attack they are doing as early as you can. Then work on learning where the safe areas around each attack are, so you know which ways to roll to not get hit.
